Food: Roasted Squash, Caramelized Figs and Feta Salad

I normally don’t eat as much salad as I should once it’s Autumn and surely not at all once it’s Winter. But I will pass on this amazing recipe of the perfect Fall Salad I am going to surprise my family , paired with a wonderful bottle of wine of course 🙂  My choice Cabernet Sauvignon from the central coast, California Ingredients 1 kabocha or acorn squash, sliced 1/4 cup + 2 tablespoons extra virgin olive oil 1/4 cup honey 2 tablespoons fresh thyme leaves kosher salt 16-20 fresh or dried figs, halved 2 tablespoons lemon juice 2 tablespoons apple cider vinegar 1 tablespoon orange zest black pepper 4 cups baby arugula 4 ounces feta cheese crumbles arils from 1 pomegranate  

Food: Dinner Tonight with Sweet Potato, Poached Egg, Avocado

I eat whatever I crave at any given time. Meaning to say, I don’t necessarily save an ideal breakfast meal just for breakfast. Eggs for dinner suits me just fine.  So, with that in mind, here’s a quick and a wonderful treat I plan to make for dinner tonight: INGREDIENTS 2 sweet potatoes olive oil salt + pepper for the chimichirri: 1 cup of loosely packed cilantro 1 cup of loosely packed parsley 1/3 cup of red onion 4 cloves of garlic 1/2 of a jalapeño, seeded 1/2 teaspoon of kosher salt 1/2 cup of extra virgin olive oil 3 tablespoons of red wine vinegar for the avocado mash: 1 avocado a squeeze of fresh lime juice (1/2 a lime) olive oil salt + pepper 2 fresh eggs (optional)

Food: Harissa and Coconut Milk, Almonds and Deliciousness

I grew up eating harissa and thought nothing of it. In fact, I hated the texture and taste. Until recently I am finding this grain sold in most grocery stores and on menus in restaurants. Here’s a recipe I can’t get enough of – Harissa, coconut milk, almonds, squash, lentil. My mouth is watering just thinking about dinner tonight. Go here for the recipe  

Food: A New Take on Antipasto

A while back, a group of us would meet up in North Beach San Francisco and order 2 antipasto Salads, and an extra large pizza to share with some wine and lots of laughter. I don’t know why this recipe reminded me of those days, but it did. I do like the creativity of the foodie who put the recipe together. Which by the way is a sure CHECK on my list for summer picnic lunches 🙂  

Food: Sweet Potato Nachos!

I’m on it! Since I have nachos practically once a week. I usually make my own version at home. You know, the typical ground beef or shredded chicken, black bean, Mexican cheese, yogurt instead of sour cream, diced tomatoes and green onions. We love it!  It’s easy, quick and a fun meal. Love the crunchy taste of the tortilla chips against all the mushiness on top. Better than pizza (wait) I have to think about that one. Anyway, somehow, someway this SWEET recipe popped up online the other day, making my mouth water, and my eyes light up with excitement, because I love a twist on anything traditional: This is worth an OMG!

Food: Mediterranean Cooking Surely A Hit

Mediterranean cooking is what I grew up with and one I cherish and consider the best of healthy foods. Recently I’ve been asking my mother to teach me all that she knows about our home cooking, and then I find ways to tweak those recipes – meaning to say – finding ways to shortcut my way through the meal prep.  In case you are not familiar, Mediterranean cooking is very time-consuming. With that said, I found an interesting site here which has a few of my favorite Medi-dishes, although a little different then the traditional style, still pretty tasty:

Food: Coconut Lime Curry Chicken

While in Edinburgh and Glasgow over the weekend, I learned that curry is one of their favorite dish, and apparently most people know how to prepare the dish from scratch – claiming how easy it is. I had no idea since I buy the ready-made curry Saab even and a can of coconut milk from Trader Joe’s and simply toss it over cubed chicken and I am done. Today upon my return back to England, my friend and I wanted to make a home cooked meal – only because we’ve been eating at restaurants for the past two plus weeks. And just like that, I went to my favorite recipe source here and on the front page of the blog saw just what I was looking for. A recipe for coconut lime Curry Chicken. This dish, with a glass of wine is the perfect pairing for the two of us, needing a night home from all the running around we’ve been doing:

Thanksgiving Part II – Desserts In Gluten-free form

In keeping up with my gluten-free menu this year, I have made my selection for thanksgiving desserts from here.  And frankly, the choices are a refreshing alternative to the usual pumpkin pie and such that’s been served in our household year in and year out.  Here are my picks for Thanksgiving 2016:

Funny, how in the 50’s and 60’s all the way to about early 2013-2014, it was all about canned goods, frozen packaged foods, and boxed goodies here in the U.S. (I can’t really speak for the rest of the world). Although disappointingly, I found the same sort of push in most of Europe, tapping heavy into working couples who have no time to make anything from scratch. Now we have nothing but information, about what to eat and what to avoid. Sometimes too much information confusing us into making bad choices, or even the choices once reported as good choices, we learn on Facebook and Twitter to being suddenly bad choices. (Are you confused? Good, that’s the point. Anyway, we can’t be sure of anything. But my motto is-if you are not sure, go the moderation route.
