I love steak sandwich and will actually search for the option on any menu while dining out. But tonight, I wanted to do something different with the skirt steak that’s been thawing out in my refrigerator. Now as I have mentioned many times, I Keto my way through life now, with the option to have one cheat day here and there. Food: Dinner Tonight – A Twist On Chicken Sandwich

Just a reminder, our household is one Keto and the rest, anything but – so I am always in search of recipe inspirations to create my own variation of a meal that suits the clan. In this case, tonight’s meal will be chicken sandwiches and chips for them and see below what my meal will look like from the recipe below: I love how easy dinner planning is – no matter the dietary restrictions. Food: Dinner Tonight – Eggplants and Italian Sausage

I found this recipe, and decided since I am aiming to Keto my way through life – to change one ingredient to fit my dietary needs.  Instead of breadcrumbs I am going to add Italian spicy sausage from Trader Joe  to personalize the already perfect recipe. Simple as that. Ingredients 1 eggplant or 4 thin and long ones 3 tablespoons of breadcrumbs 2 tablespoons of grated Parmigiano Reggiano or Pecorino Romano 1 tablespoon of finely chopped parsley 1 tablespoon of finely chopped capers either brined or in salt 1 clove of garlic 4 tablespoons of water 2 tablespoons of extra virgin olive oil plus more for drizzling A few turns of black pepper Salt {more from the original recipe}

I get it – some parts of the bay area as well as cities around the world – the weather is warming up. Not so much in San Francisco – as you may or not know – we experience winter-like weather during the summer months here and actually the locals wear coats, and ankle boots and sometimes even woolly scarves. Not exaggerating. Food: Dinner Tonight – Salmon, Dill and Lemon

Just to remind, I am following a very strict diet of eliminating carbs and sugar. So, finding creative ways to make dinner is hard. Especially for a family with different dietary needs. This recipe is close to one I already follow when baking salmon – except that is has the option to add the potatoes and a dill yogurt for dipping. In my case, I will leave out the potatoes, and replace the regular yogurt sauce with coconut yogurt. Cauliflower is the best tasting vegetable but it is an acquired taste or takes time acquiring the taste for it.  While growing up in a Mediterrean home – my family used to simply saute the cauliflower in olive oil and sprinkle a dash of sea salt  and black pepper and voila – the best snack ever.
