Food: Dinner Tonight – Red Wine Braised Short Ribs

After turkey on Thursday, and leftovers on Friday, I am ready for this recipe – an interesting one for short ribs. Food: Dinner Tonight – Spaghetti Squash Loaded with Cheese

Cheesy gooey comes to mind, while taking my early morning walk today and a taste of melted cheese. So guess what we are having for dinner tonight? And the best part is – I am not switching up anything. In fact, I am adding Italian sausage or the sweet-spicy chicken sausage 🙂 INGREDIENTS 2 medium spaghetti squash, halved and seeds removed 1 cup whole milk or heavy cream 1/3 cup basil pesto, homemade or store-bought 1 teaspoon dried oregano 8 ounces frozen chopped spinach, thawed and squeezed dried 1/2 cup whole milk ricotta cheese 1 1/2 cups shredded fontina cheese 1 cup shredded provolone cheese 1 pinch crushed red pepper flakes kosher salt and pepper fresh oregano, for serving  {more}

Monday Morning Recap

Happy Monday everyone! I don’t know about you, but I feel refreshed and ready to tackle whatever this week has in store er…well I mean, some things I have planned as well. I have started to workout again and it feels amazing – because – instead of the gym and the same old routine, I have decided to go about my working out in the most conventional way: Walking, tennis, swimming and even shooting hoops/ pretend basketball. I didn’t realize what was lacking in my drive to workout until I started doing more of it outdoors. I also finished reading this book, with high hopes of getting some insight. When I called the public library to extend borrowing the book for a few extra days, just to give me the chance to revisit some of the chapters, I was told that was ‘not possible’. As the book was in high demand – 37 people were waiting to read it; the librarian added. I suppose the book perfectly titled had done its job of directing folks …

Food: Dinner Tonight – Chipotle Lime Chicken of Sorts

Since I am being super careful with my carbs and sugar intake, I am  extra aware of how to tweak the meals I find online for our family dinner. So here’s the changes I’ve made to this recipe to work with my diet plan. Omit the honey, and the sweet potatoes, and eat the mango sparingly.  Simple 🙂 INGREDIENTS 1 pound boneless chicken breasts, cut into strips 4 tablespoons extra virgin olive oil 2 chipotle peppers in adobo, chopped 1 tablespoon honey 1 teaspoon cumin 2 limes 2 cloves garlic, minced or grated kosher salt and pepper 2 sweet potatoes, cut into matchsticks 2 avocados, lightly mashed 3 heads romaine lettuce chopped 1 mango, diced 8 ounces feta, crumbled {more}

Ah the simple pleasures of chicken and potato and although the chicken Coq au Riesling recipe I found here is a meal in itself, I felt the need to make a roasted potato side dish. What? I need comfort food with the lingering wintery weather.
