Skillet Chicken Enchiladas

We dined in a fusion Mexican restaurant yesterday, where I ordered a skillet beef, and chorizo dish. The idea of melted cheese, beans in a skillet with a side of tortillas made me feel warm and fuzzy even in the 93degree temperature outside. So, I rushed back home and searched online for a recipe I could copy for the next time around. I found this wonderful recipe and although the tortillas are mixed into the dish, I prefer to leave them on the side,  using the chips to scoop out the perfectly flavored goop. (I mean that lovingly).   The crunchy chips give the meal the perfect consistency if you ask me. But either way, here is the recipe just in case you want to experiment at home, and the link to the restaurant just in you want to make a pit stop on your way to Tahoe.

So Many Things Go Through My Mind On A Daily Basis

I always wonder if this has been the case forever, where on a daily basis so many things go through our minds. I want to believe that life was truly much simpler in the past,  and definitely before the social media craze. I mean yes we did have concerns and worries, but I don’t think the way we obsessed about them was as bad as it is now – when every day we thumb through our phones at least six or more times, in search of answers, all of which contradict one another – us hoping to relate to an article that will set us straight and perhaps help us achieve to become the best person we can – even if some of the suggestions are crazy ridiculous and we know it. I’ve sort of lagged off on this topic for the sake of other variations of putting all similar topics into one entry  rather than a mix-match of topics. Lifestyle: Healthy Suggestions To Consider

I know we don’t agree on most everything these days and trying to share any thoughts or ideas about anything out there is becoming more challenging I feel. Compelling me to ponder over the topics I want to bring up, thinking all of it has to be diplomatic and well thought out. You know, sort of  making sure I don’t offend, nor downgrade anything or anyone. At times I even delete a topic I truly want to discuss  just because, it is probably best. I don’t know if that is a good thing or a bad thing, but it is what it is right now in this less-than-optimistic world we’ve churned out. Final Thoughts From My Holiday Abroad

I took a flight from London Heathrow on Sunday, leaving my heart behind for so many reasons. I have to say too many to list here. But most of all for the wonderful time I had with a good friend of mine, touring England, Scotland and a little of France – Paris to be exact. Three weeks ago, I was beside myself, looking very forward to the trip she and I planned – considering we’d both been travel agents in the past, we spend a few weeks beforehand strategizing on how we wanted the trip to flow with minimal stress and maximum enjoyment. Now that the holiday is over, I realize that the time away from home was much-needed for me, so that I can return refreshed and recharged enough to deal with all the ups and downs that life has in store for us in 2017.
