Well this year started out not so well in terms of watching what I eat or intake actually. Because although I watch what I eat no matter at home or out, I have to now watch which food pairings work best for me or my metabolism to function properly And no this is not really age related. It’s more how a person’s body works since we know being overweight is something many folks struggle with. I’ve learned in the last year or so that, even if you diet, you may not lose the weight you hope because it comes down to individual metabolism and/or digestive processing. So if a diet works for one person, it may not do so well for another. Struggles With Anxiety Are Real

I do struggle with anxiety and for the longest time I was in denial or thinking It would go away after all the normal stress of every-day life diminishes, or that I can fix all the things that give me anxious. But recently I’ve been up every night worrying, and even having trouble breathing more often than not, and the thought of having too much on my plate all the time is certainly taking it’s toll on my body. I can feel it. Funny thing is the internet knows what topics to send my way, even if I don’t research that very subject while online, it shows up just in time, or perhaps I just notice it from the corner of my eye when I am looking for something else. Food: Dinner Tonight – Pan Roasted Brussels Sprouts

Brussels Sprouts are in season and naturally this is the time of year, I make this vegetable in so many variations and just devour a bunch in one sitting.  So you can imagine my excitement when I saw this recipe and of course I had to share. Is your mouth watering yet? INGREDIENTS 2 slices thick cut bacon, chopped 1 pound brussels sprouts, halved 3 tablespoons extra virgin olive oil kosher salt and pepper 1/2 teaspoon crushed red pepper flakes 1/3 cup medjool dates, pits removed and chopped 1/4 cup red wine vinegar 8 ounces Halloumi cheese, cubed (continued)

Food: Potato and Cauliflower Curry

Oh heavens above, this is the most amazing dish I’ve yet tried, and as we all know by now, I felt the need to share 😉 INGREDIENTS 1/4-1/3 cup Thai Red curry paste or Khao Soi Paste 2 (14 ounce) cans coconut milk 2 cups low sodium veggie broth 2 tablespoons low sodium soy sauce 1 tablespoon pomegranate molasses (or regular molasses) 1 pound baby potatoes, halved if large 1 large head cauliflower, cut into florets 1 cinnamon stick 1/2 teaspoon cumin seeds kosher salt and pepper 2 cups fresh spinach arils from 1 pomegranate for serving steamed rice, cilantro, and limes, for serving fresh naan, for serving

Food: Healthy Snacks I Load Up On

Snacking is something I do more often on a stressful or a super busy day. I suppose it’s because I burn more energy. The worst is I crave sugar, and in our office, there is a bowl of mini-candies all over the place. I used ot head right to them, but now, I avoid them like the plague and bring my own snacks from this helpful list I found:  I usually pair up the almonds with an apple – or Hummus and cauliflower, which does  wonders to your tastebuds, Eggs and Avocado is my favorite and asparagus just by itself.  

Doing a Bit Of Thinking Lately

I realize that there are more important concerns, or worries on everyone’s minds these days about everything that’s going on around the world, and/or in their own homes. And it would be insensitive of me not to say that I am fully aware and feeling just as down and helpless as the next person. I even contemplate  daily if I should simply stop the ‘all things beautiful’ outlook on this blog and open up a forum to allow folks to express their feelings and fears and just talk about whatever it is that’s bothering them so that perhaps together, we can figure out how to repair the damages we are causing to ourselves with every single headline we read on social media. Everyone is angry, everyone has something to bring to light – and I am not sure if that is a good thing or a bad thing. But it is definitely a scary and worrisome thing that most topics today are stemming from anger rather than for the sake of making a positive change. …
