Food: Carrot Cake Cheesecake with Shredded Coconut

My family has a few birthday in March – and I mean back to back and each year I buy a ready made cake from a specialty bakery for the wow factor. This year however,  I decided to try baking at home and after searching high and low, I came across this yummy treat. I hope the family feels that way as well since I think I am the only one who appreciates carrot cake. I’ll let you know how it all worked out. INGREDIENTS CHEESECAKE LAYER 2 (8 ounce) packages cream cheese 1/2 cup granulated sugar 2 eggs 2 teaspoons vanilla CARROT CAKE LAYER 1/2 cup canola oil 1/4 cup plain greek yogurt 1/3 cup granulated sugar 1/3 cup brown sugar 2 eggs 2 teaspoons vanilla extract 1 1/4 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 teaspoon cinnamon pinch of nutmeg 1 1/3 cups grated carrot 1/2 cup unsweetened or sweetened shredded coconut COCONUT CREAM TOPPING 1 (14 ounce) can cold full-fat coconut milk* 1/2 cup …

Tea Party With The Girls

I love a tea party – where a group of friends get together on a Saturday mid-afternoon for tea and goodies. You know, a collection of cakes and pastries everyone brings to the gathering. My mother, her sisters, and even sister’s in law hosted a tea-party in rotation. Each month we would get dressed up and haul our baked goods to someone’s house and have tea. You can imagine how happy I was as a child tasting every sweet cake or cookie while sipping on tea. In case you host a similar gathering – or even just need to bring a cake to a bridal shower or the one for baby – here’s a cool recipe I recommend: INGREDIENTS 1/2 cup salted butter, room temperature 3 tablespoons vegetable (or canola) oil 2 large eggs, room temperature 1 cup granulated sugar pinch orange zest (just a little) 1 teaspoon almond extract 1 teaspoon vanilla extract 1 1/2 cup all-purpose flour 1/2 cup almond flour 1 teaspoon baking powder 3/4 teaspoon salt 1 1/2 cups sliced strawberries …

Must Have Apple Not-so-Pie For Thanksgiving or Just Anytime

If I am to order dessert, believe it or not I opt for apple tart everywhere I go. And the best ones are the ones I buy ready made at Trader Joe. But for Thanksgiving this year, I decided to make something from scratch – So for dessert number two,  I am going with his recipe: INGREDIENTS 1 tablespoon, plus 2 teaspoons, unsalted butter 2 cups sugar 1 tablespoon light corn syrup 1 tablespoon water 8 large (3 to 4 pounds) firm, tart apples, peeled 1/2 (17-ounce) package puff pastry sheets Flour {more}

So You’re Incharge of Bringing Dessert or That Appetizer For Thanksgiving

Some of us are fortunate enough to get invited to that wonderful relative’s house for Thanksgiving or even a group of friends if you happen to be far away from family. The only upside or down, is having to bring either a dessert or an appetizer to contribute to one of the most important meals in the U.S. – Thanksgiving dinner. Here’s a list of suggestion for the chef and not-so-much on how to proceed: If baking is not your thing – then consider ordering a ready made dessert from here And if you’re curious as to what I am planning to surprise my family with for dessert this year –

Afternoon tea in London – On My Bucket List

Sure, I’ve done tea in the countryside in England, but never one in London. Not sure why that is, but I bet it’s the need to run around and see every tourist sight in the two-day stay I normally schedule for this fair city. Anyway, next Spring I will be going to just outside London to visit with a friend and I have already told her to pencil us in for a few tea rooms from this list:
