Food: Dinner Tonight: White Bean Beef Stew

Although it isn’t as cold as everywhere else in some parts of the world – I am craving a more heartier meal every day and since I am in charge of dinner at my house – I decided to make this beef stew variation. You know me, I can’t conform to the norm: INGREDIENTS 2 pounds beef chuck, fat trimmed and cubed 1 sweet onion, diced 2 cloves garlic, minced or grated 4 carrots, chopped 1/2 pound mixed baby potatoes, halved 3-4 jarred hot chili peppers in oil roughly, chopped (I buy Delallo Brand) 2 tablespoons all-purpose flour or arrowroot powder (gf option) kosher salt and black pepper 2 cups low sodium beef broth 2 cups red wine 1/3 cup tomato paste 4 sprigs fresh thyme 2 bay leaves 1 can (14 ounce) white beans, drained 2 cups winter greens, such as char kale or spinach {more{

Food: Dinner Tonight – Poblano Corn Chicken Tortilla Soup

Although we are in the middle of our Indian Summer in San Francisco, I have been craving soup – not a creamy one but a light, broth and just the right amount of flavors, kind of like this one: Ingredients 2 tablespoons extra virgin olive oil 1 sweet onion, chopped kosher salt and pepper 4 tomatillos, skin removed and diced 2 carrots, chopped 2 poblano peppers, sliced 3 cups homemade or store-bought red enchilada sauce 3-4 cups low-sodium chicken broth 1 pound boneless, skinless chicken breasts 2 cups fresh corn kernels 1/2 cup fresh cilantro, chopped tortilla chips, avocado, and cheddar for serving lime wedges

Food: Dinner Tonight – Chicken, Zucchini

On Monday’s while commuting to work on the train, I think about what to make for dinner. Something quick to sort of break into the week. And this recipe find couldn’t have come at a better time: Ingredients 1/3 cup low sodium soy sauce 1/3 cup rice vinegar 4 tablespoons sesame oil 1 1/2 pounds boneless skinless chicken breasts or thighs, cut in to 2-3 inch pieces 1 inch fresh ginger, thinly sliced 3 cloves garlic, thinly sliced 1 teaspoon chili flakes 1 zucchini, chopped 1 bell pepper, sliced 1 cup fresh basil rice for serving  

Food: Coconut Lime Curry Chicken

While in Edinburgh and Glasgow over the weekend, I learned that curry is one of their favorite dish, and apparently most people know how to prepare the dish from scratch – claiming how easy it is. I had no idea since I buy the ready-made curry Saab even and a can of coconut milk from Trader Joe’s and simply toss it over cubed chicken and I am done. Today upon my return back to England, my friend and I wanted to make a home cooked meal – only because we’ve been eating at restaurants for the past two plus weeks. And just like that, I went to my favorite recipe source here and on the front page of the blog saw just what I was looking for. A recipe for coconut lime Curry Chicken. This dish, with a glass of wine is the perfect pairing for the two of us, needing a night home from all the running around we’ve been doing:

Food: Irish Burrito?

We took the Eurostar from London to Paris for a five day visit – and as I sat in my hotel room to play catch up with my blog, I noticed this bit of wonderfulness. And since it’s almost St. Patrick’s Day – I figured you wouldn’t mind me adding it here just in case after all the ‘celebrating’ ahem drinking,  a burrito is in order. 🙂
