Dessert: Cream Tart, You Bring The Fresh Fruit

This simple recipe grabbed my attention the other day, only because I was craving sweets, but not heavy in sugar or endless ingredients making the baking a chore instead of a wonderful project, especially on a rainy day. The only negative for me is citrus for the fruits used. I mean I do love lemon flavored most anything, but orange for some reason, I prefer to eat fresh. So, for this recipe, I am suggesting you add your favorite fruit – blueberries, raspberries, strawberries, canned apricots, infused pairs, thinly sliced apples…well,  you get the point. INGREDIENTS 1 sheet frozen puff pasty, thawed 1 egg, beaten raw coarse sugar, for sprinkling (optional).   {I prefer a sprinkle of cinnamon over sugar} 6 ounces creme fraiche, mascarpone, or cream cheese {mascarpone over creme fraiche}  1/2 cup plain greek yogurt 1 tablespoon Meyer lemon juice + 1-2 teaspoons zest, to your taste 1 teaspoon vanilla extract 1-2 tablespoons honey, plus more for serving 6-8 mixed color oranges, thinly sliced (I used all blood oranges) 1/2 cup fresh raspberries …

How I Look Forward To Mondays

Most of my life, I have never looked forward to Mondays until recently. Not because my weekends are boring, but because, as I get older, I am loving the idea of going to work. But even though that is the case, there are some sluggish start to Mondays, and that’s when I know I haven’t taken the right steps to prepare me for the day. Lifestyle: No Carb, No Sugar Plan

April fools day, I began a lifestyle change – in terms of eating better. Meaning, I don’t want to diet, or order a meal plan to follow. I simply decided to cut out carbs and sugar as much as possible from my daily meals. I have to tell you, it is day 9 and I feel pretty determined to go on, even when I am craving sugar like nobody’s business.  I also want to report that I’ve been a little grouchy, call it having withdrawals, but I know in the long run this is going to help me. At least I hope in maintaining a healthy lifestyle. Last night I was craving a fat dessert, and opted to drink two bottles of water instead. Which helped. But today, I decided to make a list of desserts that are good to keep in mind  – for the just in case.

Lifestyle: Growing From Your Pain

Self-discovery is something we do, more so when we are faced with a traumatic event – such as losing a loved one, a job, an unexpected breakup, health issues, and even children acting out in ways so very unpredicted. The suffering we endure is the most traumatic and although most of us have gone through similar situations  at one point or another, there are no words that could ease the individualized hardship we face or have faced. I know in my case, the most I am told is ‘time will heal all wounds’ and yes it does, but what is the measure of time when coping with a traumatic event. A week, a month, a year, a decade.  The only thing that has helped me is that  I don’t look at timelines. Meaning to say, I don’t wait around for the universe to dictate if I am ready to grow from my pain and suffering. Well this year started out not so well in terms of watching what I eat or intake actually. Because although I watch what I eat no matter at home or out, I have to now watch which food pairings work best for me or my metabolism to function properly And no this is not really age related. It’s more how a person’s body works since we know being overweight is something many folks struggle with. I’ve learned in the last year or so that, even if you diet, you may not lose the weight you hope because it comes down to individual metabolism and/or digestive processing. So if a diet works for one person, it may not do so well for another. Struggles With Anxiety Are Real

I do struggle with anxiety and for the longest time I was in denial or thinking It would go away after all the normal stress of every-day life diminishes, or that I can fix all the things that give me anxious. But recently I’ve been up every night worrying, and even having trouble breathing more often than not, and the thought of having too much on my plate all the time is certainly taking it’s toll on my body. I can feel it. Funny thing is the internet knows what topics to send my way, even if I don’t research that very subject while online, it shows up just in time, or perhaps I just notice it from the corner of my eye when I am looking for something else.
