Food: Dinner Tonight – Pumpkin Beer Broccoli Cheddar Soup

Yes, even with the 80 plus degree weather in the city, I am craving soup. The only benefit is that I will eat it after sundown – when the temperatures begin to cool down to Autumn  weather mid 50’s. Which is pretty crispy-chilly where I am by the coast. So this morning while commuting to work, I craved something made with pumpkin. Then after having a slice of Tillamoo’s single servicing cheddar cheese for a mid-morning snack with sliced granny apples, I realized I wanted soup from my go-to recipe site: Ingredients 2 tablespoons extra virgin olive oil 3 tablespoons butter 1 small sweet onion, diced 1 carrot, diced 1/4 cup all-purpose flour 2 cups whole milk 2 cups low sodium veggie or chicken broth 1 12 ounce pumpkin beer 3-4 cups shredded sharp cheddar cheese, plus more for serving 2 bay leaves 1/4 teaspoon freshly grated nutmeg 1/4 teaspoon cayenne, or more to taste 1 large pinch kosher salt and pepper 4 cups broccoli florets 2 tablespoons fresh thyme leaves, plus more for serving

Yes I am on a French kick today for sure.  This morning I was craving something sweet, and as always the internet knows exactly what I am thinking because there is this recipe I found which will certainly satisfy the sweet cravings: Ingredients 1 cup apple cider 1 stick butter 1 tablespoon brown sugar 1 cinnamon stick 1 cup all purpose flour 1/2 teaspoon kosher salt 3-4 eggs Chai Glaze 1 teaspoon cinnamon 1/2 teaspoon ginger 1/4 teaspoon all-spice 1/4 teaspoon cardamom 1/8 teaspoon ground cloves 1 cup powdered sugar 1 teaspoon vanilla extract

Food: Dinner Tonight – Chicken Ramen

Ramen, otherwise known as a type of soup, is an easy meal, and with the ever changing temps in the city by the bay, I think this amazing recipe will have to do for dinner tonight: Ingredients 2 strips thick cut bacon, chopped 1 inch fresh ginger, thinly sliced 4 cups low sodium chicken broth 2 tablespoons low sodium soy sauce 1/4 cup rice vinegar 2 tablespoons curry paste 1 tablespoon chili paste 3/4 pound boneless, skinless chicken breast 1 ounce dried porcini mushrooms 8 ounces fresh cremini mushrooms, sliced 2 tablespoons toasted sesame oil 1 pack ramen noodles 3 cups fresh baby spinach 4 soft or hard boiled eggs, for serving shredded carrots, green onions, chilies and cilantro, for serving

Although we are in the middle of our Indian Summer in San Francisco, I have been craving soup – not a creamy one but a light, broth and just the right amount of flavors, kind of like this one: Ingredients 2 tablespoons extra virgin olive oil 1 sweet onion, chopped kosher salt and pepper 4 tomatillos, skin removed and diced 2 carrots, chopped 2 poblano peppers, sliced 3 cups homemade or store-bought red enchilada sauce 3-4 cups low-sodium chicken broth 1 pound boneless, skinless chicken breasts 2 cups fresh corn kernels 1/2 cup fresh cilantro, chopped tortilla chips, avocado, and cheddar for serving lime wedges

This topic could go under either topic – Food or Travel. Food if you are a local of course, and travel if you fancy burgers and will make a special trip to the US or state-to-state to test-taste all of them.  Oh what a challenge that would be for someone like me – a road trip just to taste burgers from different cities and states. Silly me. But besides that fact, here’s the list:

On Monday’s while commuting to work on the train, I think about what to make for dinner. Something quick to sort of break into the week. And this recipe find couldn’t have come at a better time: Ingredients 1/3 cup low sodium soy sauce 1/3 cup rice vinegar 4 tablespoons sesame oil 1 1/2 pounds boneless skinless chicken breasts or thighs, cut in to 2-3 inch pieces 1 inch fresh ginger, thinly sliced 3 cloves garlic, thinly sliced 1 teaspoon chili flakes 1 zucchini, chopped 1 bell pepper, sliced 1 cup fresh basil rice for serving
