Well, I know this only applies to the states, the long weekend and all, but the idea that Fall is just around the corner has me wanting to be outdoors as much as possible – before I settle into the comfort of my sofa, watching too much television and doing the much reading I put off all summer long. Food: Lime, Cilantro and Salmon

I’ve been testing out plant based diet – or way of eating and so far, it’s been challenging. What sucks is that the second we are aware of something changing, we become obsessed with all the bad associated with it. In this case, I am having withdrawals for mostly salmon. Not so much beef, or chicken, but for sure salmon. Yesterday, I had my first scrambled eggs, by accident, since I was in a place which offered nothing plant-based for breakfast yesterday, and I had to default to eggs. But that’s okay, I am well disciplined in life and will bounce back to plant-based approach.  And make the following dish for dinner tonight – no rice of course. INGREDIENTS 4 (5-6 ounce) salmon filets, skin on or off 2 teaspoons chili powder, chipotle or regular 2 teaspoons smoked paprika kosher salt and black pepper 3 tablespoons extra virgin olive oil 2 red or orange bell peppers, thinly sliced 1 yellow onion, thinly sliced 3 tablespoons salted butter 3 cloves garlic, minced or grated zest and juice of 2 limes, plus more for serving 1 tablespoon honey 1/4 cup fresh cilantro, roughly chopped 1/4 cup fresh …

Food: Eggs Florentine and Bread Pudding Cake

Having breakfast/brunch over the weekend with a few friends and I figured I’d take another approach to the usual breakfast I normally opt for. The safe one, with granola of sorts, fresh fruit platter, and good coffee.  But this time around, since we plan to meet up for a walk across land’s end in San Francisco, a heartier breakfast is in order. On another note, in case you are interest past those living in the U.S. – why wearing white after Labor Day is questionable.

I love Asian fusion or simply Asian inspired food and this recipe for Thai Chicken and Noodles is something worth sharing in today’s ONLY Food series: INGREDIENTS 8 ounces wide rice noodles 1/3 cup low sodium soy sauce or liquid aminos 3 tablespoons oyster sauce 1 tablespoon Thai fish sauce 2 teaspoons honey or maple 2 tablespoons sesame oil or extra virgin olive oil 1/2 pound boneless chicken breast, cut into strips (optional) 2 shallots, thinly sliced 3 cloves garlic, minced or grated 1-2 red Fresno peppers or jalapeño peppers, seeded and chopped 4 green onions, chopped 1 medium zucchini, cut into ribbons or chopped 1 red bell pepper, thinly sliced 2 carrots, cut into ribbons or chopped 1 cup fresh Thai basil or regular basil, roughly chopped {more} What’s your favorite Asian Dish?

Food: Gluten-Free and Vegan Chocolate Chip Cookies

Today is all about food – so you’ll see back to back posts about eating. Maybe because I am hungry since this plant-based diet I am trying out, but not yet ready to talk about until I see results.  But, this recipe about Gluten Free & Vegan Chocolate Chip Cookies is something I cannot pass up sharing since from the grocers you can either find gluten-free OR Vegan in products, but seldom the two combined for those with the severest food allergies. Recipe 1 1/4 cup oat flour 1 1/2 cup almond flour 1/4 cup cornstarch 3/4 teaspoon salt 3/4 teaspoon baking soda 1/4 cup vegetable oil 1/8 cup pecans (roughly chopped) 2 tablespoons all-vegetable shortening 1 cup dark brown sugar   {I am going to use Coconut sugar instead} 1/4 cup granulated sugar  – {coconut sugar instead} 1/2 cup unsweetened apple sauce 1/2 teaspoon baking powder 2 teaspoons vanilla 4 ounces baking chocolate (roughly chopped) {more} and just in case you haven’t seen this pic from my previous post, I am sharing it with you again. 

Food: Dinner Tonight – Salad with Chickpea, Corn, Tomato, Avocado

Ingredients that go way back in my culture, are now coming to light – in all sorts of ways. But the only difference in this case, is that we used to eat roasted lightly salted chickpeas as a snack (instead of candy) and never have considered it in salad. 🙂 So, since I am on the verge of converting to plant-based ‘not-diet’ – I figured I’d give this salad a try – with the feta cheese. Because…I have trouble letting-go of cheese. INGREDIENTS 1/2 cup fresh basil, roughly chopped 1/4 cup fresh cilantro, and or parsley, roughly chopped 1 tablespoon fresh chopped chives 1 can (14 ounce) chickpeas, drained 4 ears grilled or steamed corn, kernels removed 2 cups cherry tomatoes, halved 2 Persian cucumbers, diced 1 cup cubed feta cheese 1 avocado, diced SHALLOT VINAIGRETTE 1/3 cup extra virgin olive oil 1 shallot, finely chopped 2 tablespoons fresh lemon juice + the zest of 1 lemon 2 teaspoons honey 2 tablespoons red wine vinegar 1 pinch crushed red peppers flakes kosher salt and black pepper {more} On another note, what films have you seen lately and recommend? yes, I did go..and..see…Hobbs and Shaw

Food: Home-made Pizza Night

I love home-made pizza, even if making the crust is sometimes challenging – since I am not one who loves kneading dough to perfection. But…there is so much to be said about home-made and this recipe sound delicious…and naturally you are always welcome to bring your butter/oil of choice. INGREDIENTS 3 tablespoons Land O Lakes® Butter with Olive Oil and Sea Salt 2 cloves garlic, minced or grated 1 tablespoon chopped fresh oregano 2 tablespoons fresh thyme leaves 1/4 cup fresh basil, chopped, plus more for serving 1/2 teaspoon crushed red pepper flakes 1 pinch black pepper 1/2 pound pizza dough, homemade or store-bought 1 cup baby spinach 3 ounces crumbled goat cheese 1 heirloom tomato, sliced ¼” thick 1 cup cubed provolone or mozzarella 2 cups heirloom cherry tomatoes, halved flaky sea salt   2 tablespoons balsamic or white balsamic vinegar  {more}  

Food: Plant Based Desserts

Would you ever consider a plant based diet? You know, to help flush out the impurities in your system and somewhat recharge your body. Well, I’ve been leaning towards this concept and have been doing much research to determine if this style of life is the right one for my body. With that said, the first thing I did was research if desserts could be made with only plant-based ingredients and look what I stumbled upon! Would you try the diet or the way-of-eating since plant-based diet isn’t considered an actual diet? Or are you too much of a meat lover? I’d love to hear your side of the story
