Weekend Recap and A Few Lovely Things

We had a freakishly tropical weather this weekend and normally when us locals see sun at the coast, we don’t venture far from the city. We actually pour outside and explore the coast. So that’s what happened, instead of us escaping town by driving across the Golden Gate, we actually walked it across on Saturday, all 1.7 miles in each direction and then some back to our car parked another mile from the bridge. It was invigorating, since the last time I did the walk was five years ago.  This time around with hardly any tourists but having to adapt to the social distancing criteria – which was the most challenging on a narrow walkway. But we did it, under the scorching sun, and hot wind against our skin. What Are Your Plans This Weekend

I’ve been dreaming of cabin living, somewhere out in the woods  – perhaps near Tahoe. Funny thing is, if I was posed with the same question a decade ago, I’d say for sure the city, in a high rise condo overlooking the bay. But lately or even before COVID, I’ve been thinking of finding my way back to nature.  Kind of like a lifestyle  in this beautiful place blended so perfectly into its environment. Because of this need to bond with nature, I’ve been aiming to find walking trails or suburbian parks where I can simply soak up all the beautiful wonders in my neck of the woods, and even the man engineered ones. So this weekend, we are once again venturing across the Golden Gate, and allowing the road to take us to places we’ve never been.  Stay tuned for a recap. A Pasta Recipe and Other Topics To Share

While serving my mother chicken Fajita last night for dinner, she asked if there were any surprises for her to look forward to – in terms of dinner. So I told her, I was considering making this pasta and she actually grimaced at the idea of lemon in pasta. Which happens to be my favorite – ingredient – Shrimp Scampi, which I often substitute with Salmon.  Artichoke steamed in olive oil and lemon – all recipes I learned from my Mediterranean family. Anyway, back to the pasta – check out the simple ingredients making up a very flavorful meal – and will pair nicely with a glass of my favorite cab and sure, salad too. Weekend Recap – Part 2 – Sausalito Trails

Since the fog held steady over the Golden Gate Bridge, we decided to explore Sausalito – not that we haven’t been a million times. But we figured since it was sunny, warm and we did not really want to drive too far inland, we would park in the small town and walk to Baker Beach, (opposite direction) and then detour to the highest peek in Sausalito, and walk the winding roads, while taking in the views from a different elevation. So that’s what happened on Sunday.   After the wonderful walk, we sat in the park down below and simply soaked it all in – before heading back into the extreme fog and cold – and put on our winter clothes while considering turning on the heater.

Weekend Recap and Hello Monday

Is anyone else not sleeping well at nights?  I ask only because last night was the worst – no sleep at all – none and while on Facebook in between doodling with the color apps on my phone, I noticed a few of my friends were also up. If I weren’t so worried about making too much noise, I would have sent out a Facebook invite to have an after hours drinks and conversation. Anyway – let’s move past this and talk about the weekend. Hope all of you had a pretty good weekend, doing your part to stay safe, six-feet apart, while taking in sun, and and doing things with your family that made you happy. I went for my walks as usual – this time seven miles each day, instead of the five. On Saturday to check out Larkspur, where I’ve never been in all the years I’ve been living in San Francisco.  It’s weird how this Pandemic has redefined how I would be traveling and exploring – each weekend a new place, …

What Are Your Plans This Weekend

This week seemed extra long for some reason, but I am glad that today is Friday and the planning for the weekend is in full force – chase sun, leave town. The same goal, but different places. I think a drive to Sonoma on Saturday is in order again – in search of a new trail and Sunday, perhaps the sun will force its way through the fog and we can walk through Golden Gate Park.  We’ll see. In the meantime, I found a few interesting finds online which naturally I feel the need to share and a few films – worth snuggling up on the sofa with a bottle of wine and pop corn – my favorite combination and simply allow your mind to escape. what are you doing this weekend? {featured image source and full credit}

Food: Dinner Tonight – Lentil Salad

I have a bag of lentil I’ve been itching to cook up – normally I drizzle olive oil, a squeeze of lemon, chop up fresh cilantro, and dice up chives and voila a quick and easy dish after a busy day.  But today, this recipe sparked my desire to up the simple meal to this variation – I will use Halloumi cheese naturally – which is the best grilling cheese in my opinion.  Paired with a bottle of white or red (for me) and now we have a gourmet stay-in dinner. INGREDIENTS Kosher salt ¾ cup black beluga lentils 3 Tbsp. sherry vinegar or red wine vinegar 1 Tbsp. honey 5 Tbsp. extra-virgin olive oil, divided Freshly ground black pepper 8 oz. grilling cheese (such as bread, Halloumi, or paneer), torn into 2″ pieces 1 lb. sweet mini peppers, ribs and seeds removed, halved lengthwise, cut into thirds if large ½ tsp. dried oregano ¼ cup (packed) basil leaves, torn if large Flaky sea salt  {continued}     Featured image source and full credit

My bucket list is growing. It’s funny, all my adult life, I figured abroad was the only way to getaway and that I’ve done all the U.S. travel I needed to in between: New York, Pennsylvania, Montana, Colorado, Washington State, Washington D.C., Oregon, Chicago, naturally all of California, Arizona, Texas, Nevada, and even New Mexico and Alabama, I’ve seen them all, or so I think of course: So here’s to my list of five lakes in the U.S. I will be visiting 2021 and the rest spread out over time.  Looks like the RV concept is going to become a reality after all :).
