Food: Party Prep – You Had Me at…Honey Roasted Acorn

I try to change it up every year, in terms of side dishes or even a starter when I am hosting a get-together for the holidays – in the U.S. meaning to clarify – Thanksgiving or a party between the holidays. So, this amazing dish with honey butter roasted acorn, burrata and pomegranate made it on my menu for Thanksgiving: INGREDIENTS 2 acorn squash, seeded and cut into wedges 4 tablespoons butter 2 tablespoons honey, plus more for drizzling 1 tablespoon brown sugar 1/2-1 teaspoon crushed red pepper flakes, to taste kosher salt and pepper 2-3 balls burrata cheese extra virgin olive oil, for drizzling 4 fresh sage leaves, chopped 1/2 cup roasted, salted hazelnuts, roughly chopped 1/2 cup pomegranate arils

I seldom look over the cocktail menu at a bar, unless I am wondering what sort of wine they serve that’s on the happy hour list. I am guilty, like most of us living a very stressful life, of being almost too anxious sometimes. And I find myself staying up a couple of nights a week thinking and worrying about all things called life. Food: Dinner Tonight – Pasta, Roasted Butternut Squash and Sun Dried Tomatoes

I had to run out this morning to get the ingredients for this amazing dish I found here. Paired with the perfect bottle of Cabernet Sauvignon I am good to go for tonight’s dinner INGREDIENTS 2 tablespoons extra virgin olive oil 1 pound ground spicy Italian sausage 1/2 sweet onion, chopped 3 garlic cloves, smashed kosher salt and pepper 1 1/2 cups cubed butternut squash 1 can (28 ounce) San Marzano tomatoes 1/2 cup red wine 1 bay leaf 4 fresh sage leaves 2 fresh thyme sprigs 4 tablespoons butter 1 pound Pappardelle or your favorite cut of pasta burrata cheese and parmesan cheese, for serving
