Food: Dinner Tonight – Chipotle, Lime Chicken and Fries

The weather has finally turned for the better in the city – with warm days and SUNSHINE throughout the city and not just downtown. I love this time of the year, when the mornings are crispy cold-ish and the days although shorter are sunny and hot. The only challenge is while other parts of the world are turning to comfort food, or soups to wards off the colder temperatures, we in the city are aiming to cool down by eating all things summer. So I am naturally pretty conscious on how best to proceed with my weekly meal plan, and I think this one will do just fine to half-Keto for me and the original recipe for the family. INGREDIENTS 1 pound boneless chicken breasts, cut into strips 4 tablespoons extra virgin olive oil 2 chipotle peppers in adobo, chopped 1 tablespoon honey (cut out for hardcore Keto) 1 teaspoon cumin 2 limes 2 cloves garlic, minced or grated kosher salt and pepper 2 sweet potatoes, cut into matchsticks  (I can cut this portion out for Keto, but I may just cheat today)  2 avocados, lightly mashed 3 heads romaine lettuce …

Food: Dinner Tonight – Zucchini and Cheese Lasagna

Okay, so here’s a solid recipe to a favorite dish of mine – spicy Italian sausage, veggie (in this case zucchini,  or eggplant that I love, and all sorts of cheese). As you well know, I am always searching for variations to the simplest of ingredients making up a fun recipe and this one works – because in my household, we are divided – 1 Keto (me) and the rest not so much. So, this is what I do to make two dishes out of one recipe: INGREDIENTS 2 tablespoons extra virgin olive oil 1 pound ground spicy Italian sausage 1 small sweet onion, diced 4 medium heirloom tomatoes (or regular), roughly chopped 2 cups cherry tomatoes 2 tablespoons fresh thyme leaves 1 tablespoon fresh chopped oregano kosher salt and pepper 1/2 cup red wine  (cut out for hardcore Keto followers) 1/4 cup fresh basil, roughly chopped, plus more for serving 6-8 no boil lasagna noodles (replace with sliced Halloumi cheese or just cut out the noodles altogether)  3 medium zucchini, sliced into 1/8 inch slices 1 cup whole milk ricotta cheese 1 cup fresh mozzarella cheese, torn 1/2 cup grated parmesan cheese {more}

I indulged past my Keto diet plan while away for the past two weeks, telling myself while scuffing down food that I was going to regret it when I returned home. The only saving grace for me was that I walked it off so the outcome of my cheating wasn’t as bad as I thought it would be. The only trouble is – now I am having a tough time getting back on that wagon. Baby steps I say to convince myself. It’s been crazy cold around the country, with sub-freezing temps and dangerous conditions, forcing most folks to stay indoors, craving mostly comfort foods. Well, at least I feel that way. But I also love soup. Home made more so than store bought. And figured I’d share these wonderful soup recipes I found – for every day of the week:

Food: Healthy Snacks I Load Up On

Snacking is something I do more often on a stressful or a super busy day. I suppose it’s because I burn more energy. The worst is I crave sugar, and in our office, there is a bowl of mini-candies all over the place. I used ot head right to them, but now, I avoid them like the plague and bring my own snacks from this helpful list I found:  I usually pair up the almonds with an apple – or Hummus and cauliflower, which does  wonders to your tastebuds, Eggs and Avocado is my favorite and asparagus just by itself.

Food: Grilled Sweet Potato, Baked Beans and Cilantro Yogurt Drizzle

I’ve indulged sweet potatoes for about ten years now. I mean to say, in addition to eating them every Thanksgiving supper. I used to simply order them as fries and just nipple while enjoying a cocktail with friends. And then I grew up and began to experiment with different recipes. So with that bit of nonessential  intro – I give you the following recipe I think is a meal in itself: INGREDIENTS  2 large sweet potatoes 2 tablespoons of sunflower oil (or any neutral high-heat oil) 1 red onion, diced 2 cloves of garlic, minced 1 can of black beans, drained 1 cup of (your favorite) bbq sauce (store bought, or homemade) 6oz of plain greek yogurt (coconut yogurt to make this dairy-free) 2 tablespoons of minced shallots ¼ teaspoon of salt 1 tablespoon of lemon juice ½ cup of cilantro leaves (plus more for garnish)

Food: The Best Ideas For When You Crave

I’m always craving the weirdest things…wait…let me clarify. I crave things at the weirdest times of the day. For example, I sometimes want to it a insalata caprese in the morning, or crave dessert just before dinner, raw peanuts or almonds at midnight, and even Chinese food at 9:00 in the morning. So, to feed my cravings when they hit, I look for interesting variations on prepping the usual. Just thought I put that out there…nothing interesting.
