Food: My Choice of Comfort Food – Pasta

Even on the warmest of these days, I crave Pasta paired with a glass of wine.  So, when I am asked ‘what’s for dinner’ I simply smile and everyone around me gets it. In fact, while on zoom with family yesterday, we compared pasta recipes, which naturally got me craving again – you guest it –  pasta for dinner tonight and the wine of course. Now, I normally don’t mix ground beef and Italian sausage, but I think for the sake of tonight’s efforts for positive thinking – this is the recipe I’ll be following: RECIPE 2 tablespoons extra-virgin olive oil 1 medium yellow onion, peeled and diced 4 cloves garlic, peeled and minced 1 pound Italian sausage, hot or mild or a mixture, cut into coins or crumbled 1 pound ground beef 1 (6-ounce) can tomato paste 1 stick cinnamon, if you have one 2 teaspoons red pepper flakes (optional) 1 teaspoon fennel seeds, if you have them 2 teaspoons dried basil, if you have them 1 (28-ounce) can peeled whole or crushed tomatoes 1 big glug of red wine, if there is some to hand Kosher salt and freshly ground black …

One of the things I miss the most while on the road, is making a home cooked meal. Even though that’s the case,  I still am intrigued by the many helpful hints or suggestions for cooking and recipes. Food: Baking a Pie Today

A lazy holiday today has me a bit off-balance, in that I flew back from a short trip up north and now find myself doing a bit of tiding up around the house, and the need to bake something. Perhaps my Fall/Autumn radar is up. But while killing time at coffee shop bookstore yesterday waiting for my ride home from the airport, I ordered a cup of coffee and a pistachio light dessert – and when I saw this recipe, it reminded of how perfectly tasty that one from the coffee shop was – so I made it – mostly with coconut milk, oil and cream: INGREDIENTS 1 1/2 cups graham cracker crumbs (about 10 full-size graham cracker sheets) 6 tablespoons salted butter or coconut oil, melted 4 tablespoons maple syrup 2 cups date caramel (below) or store-bought dulce de leche 3-4 ripe but firm bananas, sliced 1 1/2 cups heavy cream (see coconut cream variation in notes) 2 teaspoons pure vanilla extract 2 tablespoons maple syrup chocolate shavings, for topping {more}   and I will be sitting in front of the television set, binge watching  The Detour? Food: Dessert or Breakfast

I came across this recipe when trying to figure out what is for dessert tonight – and then I realized if I add my own take on it – I can also have the ‘dessert’ for breakfast or mid-morning snack – Raspberry & Cream Fools with Amaretti Crumble (Original recipe I am having for dessert) 2 pints raspberries, washed 1 tablespoon sugar, divided 1/2 teaspoon vanilla extract 1 cup chilled heavy whipping cream 1 cup amaretti cookies, crushed {more}   My Take for the breakfast option raspberries or strawberries – washed Organic Honey to taste A dash of vanilla extract I cup coconut or almond yogurt Homemade granola crumble or store bought is fine if you are pressed for time and just layer or mix together – either way it will be delicious Undecided about dinner tonight – try this recipe for Frittata or add your favorites (bacon bits, green peppers, mushrooms, cheese) to an egg scramble – to be enjoyed with a couple of slices of rustic Italian bread – toasted of course. 

Food: I Call It Eating Light and Airy

The past couple of months while on the road, I’ve done some damage to my digestive system. Meaning to say, that I’ve made bad choices – in terms of eating. But the truth of the matter is that I was helping a friend re-locate from north California to Southern California and because of the madness, we’ve ordered in mostly. Or eaten at not-so-ideal chain fast food places. So, I am currently trying to detox my system from all the salt, and butter and just plain crap. And eating very light and airy I call it because of the fluff more so than the substance in the selections I’m making.  This is what I mean:
