Food: Dinner Tonight- Coconut Basil Chicken

I’ve been craving flavorful meals, zesty, spicy and full of energy (yes food can have energy) so with chicken breast being thawed today, I am going to attempt this recipe for tonight’s dinner – in hope my mother will appreciate the cuisine. A little less on the spicier side for her palette INGREDIENTS 1 pound boneless skinless chicken thighs or breasts, thinly sliced 1 1/2 tablespoons yellow curry powder 1 teaspoon ground turmeric 1/4-1/2 teaspoon cayenne pepper using more or less to your taste kosher salt and black pepper 3 tablespoons sesame oil or extra virgin olive oil 2 zucchini or summer squash, diced 2 ears sweet corn, kernels removed from the cob 2-3 medium shallots, chopped 2 cloves garlic, minced or grated 1 inch fresh ginger, grated 1 pinch crushed red pepper flakes 1 can (14 ounce) coconut milk juice and zest from 1/2 a lemon 1/4 cup fresh cilantro, chopped 1/4 cup fresh basil, roughly torn 2 cups cooked basmati rice toasted sesame seeds for serving {more} {featured image and recipe full credit and source}

Food: Dinner Tonight – Korean Chicken Bowl

And to think I was considering making a simple fajita dish, until I stumbled upon this recipe for sheet pan Korean chicken bowl with sweet potatoes and yum yum sauce and dinner will be a whole kinds of wonderful tonight! Food: Dinner Tonight – Lemon Chicken and Mint Sauce

Chicken is always a good idea – especially if its the only thing left in the freezer a day before the weekly grocery shopping.  So, this recipe is perfect for tonight’s dinner, paired with a glass of my favorite Cabernet. INGREDIENTS 2 pounds boneless skinless chicken breasts cut into bite size chunks 3 tablespoons extra virgin olive oil 2 tablespoons balsamic vinegar 2 teaspoons smoked paprika 2 tablespoons chopped fresh oregano 1 small shallot, chopped 2 cloves garlic, minced or grated zest and juice of 1 lemon 1 pinch crushed red pepper flakes kosher salt and black pepper 2-3 cups cooked orzo or couscous, for serving 1 roasted red pepper, sliced 8 ounces feta cheese, cubed or crumbled sliced avocado, Persian cucumbers, olives, and basil, for serving SIZZLED MINT GODDESS SAUCE 1/4 cup extra virgin olive oil 1 tablespoon chopped fresh mint 1 cup plain Greek Yogurt 1/2 cup fresh basil or parsley, chopped juice from 1 lemon 1 jalapeño, halved and seeded 1 teaspoon cumin kosher salt {more} For dessert in case there is still room – consider this recipe     

Food: Dinner Tonight – Lemony Chicken and Orzo

I got a late start today – after waking up at 330 in the morning, to get glimpse of the only blood moon for 2019 – which was more silvery by the coastal San Francisco. But that’s ok. It was a beautiful sight no less – clouds stacked upon clouds, and the full-moon larger than usual, adding the perfect soothing shades to the fluff, glistening over the Pacific. I grabbed a fresh-bought novel from the stack I brought back with me from England, and got back into bed – with dog by my side, I attempted to read, but ended up falling asleep instead – waking up suddenly and realizing I hadn’t shared a subject of interest with all of you this morning. So – first of all – thank you to those who emailed me for a copy of a novel I had written a few years back. Your copy will be in the mail in the next few days. Second, I am jumping right into an easy dinner on this cold San Francisco …

Food: Dinner Tonight – Chipotle Lime Chicken of Sorts

Since I am being super careful with my carbs and sugar intake, I am  extra aware of how to tweak the meals I find online for our family dinner. So here’s the changes I’ve made to this recipe to work with my diet plan. Omit the honey, and the sweet potatoes, and eat the mango sparingly.  Simple 🙂 INGREDIENTS 1 pound boneless chicken breasts, cut into strips 4 tablespoons extra virgin olive oil 2 chipotle peppers in adobo, chopped 1 tablespoon honey 1 teaspoon cumin 2 limes 2 cloves garlic, minced or grated kosher salt and pepper 2 sweet potatoes, cut into matchsticks 2 avocados, lightly mashed 3 heads romaine lettuce chopped 1 mango, diced 8 ounces feta, crumbled {more}
