Food: Chicken or Beef Tacos – Another Version Added To My Collection of Taco Recipes

Tacos it is – again – but I am not complaining and after testing out this recipe, I doubt the family will complain either. Except for one thing – I do not like ground chicken – I preferred pulled chicken instead. So, that’s how this recipe will go down in my household. Feel free to add you favorite protein. INGREDIENTS 2 tablespoons extra virgin olive oil 1 pound ground chicken, beef, or turkey 1 yellow onion, chopped 2-3 teaspoons chipotle chili powder use to your taste 2 teaspoons smoked paprika 1 1/2 teaspoons ground cumin 1 teaspoon garlic powder 1/4-1/2 teaspoon crushed red pepper use to your taste 1/2 teaspoon dried oregano 1 teaspoon kosher salt 12 hard shell tacos 2 cups shredded Mexican cheese CILANTRO LIME RANCH 1 cup sour cream or plain Greek yogurt 3/4 cup fresh cilantro, finely chopped 1 teaspoon garlic powder 1 teaspoon onion powder 1/4 cup pickled jalapeños, chopped + 2 tablespoons brine juice from 2 limes 1 teaspoon kosher salt  {more} On another note – would you take a trip to New York just to see this Broadway musical – about Princess Diana?

One of the things I miss the most while on the road, is making a home cooked meal. Even though that’s the case,  I still am intrigued by the many helpful hints or suggestions for cooking and recipes. Food: Chicken, Veggies and Avocado

This recipe is titled California Chicken – which naturally sparked my interest – because I am often curious about the naming of recipes. California chicken in this case, has to do with Avocados I think.  All I know, is that I have chicken thawing in the refrigerator and at first considered a simple fajita dinner, but now – well, we are making California Chicken for dinner tonight. Food: Dinner Tonight – Coq Au Vin A Try

I’ve always considered Coq Au Vin an unobtainable recipe to follow for my kitchen. I don’t know why I freak out over French cuisine. Perhaps it’s because I appreciate the art to the point, I am intimated by it. But I was watching Leap Year for the umpteenth time last night, where there is a scene the two main characters cook up Coq Au Vin for a B&B they were forced to spend the night, after missing their train to Dublin – if you haven’t seen the film, and need a jolt of silly-funny, then select on any pay-per-view you subscribe to  – Netflix or Amazon Prime and watch it. Anyway, I am finally getting my appetite back and dish recipe is one I am going to to attempt for dinner tonight – with no substitutes – I feel too malnourished for substitution. Football Season Plus Comfort Snacks

I got an email from a co-worker asking if I am going to join the fantasy football league. My first reaction-hesitation.  Then I asked my hubby what he thought and his eyes lit up. So I signed up. Which means I will become a dedicated football fan this season. The first thing I turn to naturally is healthy snack choices to make football watching on Sundays more bearable. I’m more of a soccer and baseball kind of gal, just in case you are wondering what sports I prefer or if any. But I also know the right type of eats plays into the whole experience week and week for the next five months.
