I am sure this may sound a bit cliché but throughout my life, I have experienced the best Mediterranean cuisine one can possibly imagine From my grandmother, to my mother, aunts and even a cousin who studied at Cordon Bleu in Paris. The meals, although the same staple, were served with a variety of flavors, spices and methods , depending on what part of the region one was from. What I do now in my own cooking is I combine all of the flavors and styles to create my own variation. I have to say it’s been surprisingly amazing. Days and weeks have blended together once again, where I end up asking often what day of the week it is? I keep saying lots is going on, and it is, which sadly has kept me from posting as often as I want to. But I do try to stay connected, and between the stressful moments in my day, I strive to see the most beautiful of things.

Someone at work over a call, reminded me it was a long weekend here in the states and asked what my plans were. I batted my eyes for a second and sadly sighed knowing my options, like most others, are pretty limited. Pandemic, brutal winter days + caring for mom and an aging dog, I will be spending my weekend working mostly, possibly cooking, and some light cleaning – okay – some very intense house chores.
