I decided to take this week off – from work and even the new /strange lifestyle we’ve all been living since the social distancing and all. It is a staycation naturally, where I had to find creative ways to be outdoors and away from San Francisco’s dreary ‘summer months.’ In case you don’t know, San Francisco has the coldest summer with heavy fog, drizzle, wind and nothing but gray. I’ll be talking about the staycation next week, once I’ve put my concept together on how to present the blog post to you all. Food: Chicken and Garlic Noodles

Some ingredients are hard to find at the grocery store, so I’ve been improvising – to create meals I’be been craving from evenings out with friends at a local Asian fusion restaurant.  Mind you, these are not my recipes, but ones I find online with the ingredients and ease of prepping ideal.  Because for me – time is valuable – and spending too much time over a hot stove takes away that much time from the eating ritual in my home – with spirits and loaded conversations – fun ones of course – since who wants to be brimmed with anxiety over a meal? For dinner tonight – I will make this chicken and garlic noodle dinner with a few minor adjustments – due to shortage of ingredients or some I don’t care for. Food: Dinner Tonight – Korean Chicken Bowl

And to think I was considering making a simple fajita dish, until I stumbled upon this recipe for sheet pan Korean chicken bowl with sweet potatoes and yum yum sauce and dinner will be a whole kinds of wonderful tonight! Ah the simple pleasures of chicken and potato and although the chicken Coq au Riesling recipe I found here is a meal in itself, I felt the need to make a roasted potato side dish. What? I need comfort food with the lingering wintery weather. Food: Dinner Tonight – Chicken, Zucchini

On Monday’s while commuting to work on the train, I think about what to make for dinner. Something quick to sort of break into the week. And this recipe find couldn’t have come at a better time: Ingredients 1/3 cup low sodium soy sauce 1/3 cup rice vinegar 4 tablespoons sesame oil 1 1/2 pounds boneless skinless chicken breasts or thighs, cut in to 2-3 inch pieces 1 inch fresh ginger, thinly sliced 3 cloves garlic, thinly sliced 1 teaspoon chili flakes 1 zucchini, chopped 1 bell pepper, sliced 1 cup fresh basil rice for serving
