Food: Dinner Tonight – Chicken Soup With Orzo Included

On Monday, I announced to my family that I would be making chicken soup for dinner – except, when I got home from work, I realized I did not have the chicken broth in the cupboard as I imagined I did while on the commuter train. And since then, I’ve been too lazy to go to the supermarket and get the one important ingredient to make the soup I’d been craving for four days now. Yes, I do know I can make my own chicken broth simply by using the water the chicken was boiled in, which I do. But store bought chicken brought adds just the right zing or heartiness my taste buds crave. So, to the supermarket after work it is and home to make this delicious version of chicken soup: INGREDIENTS 2 chicken breasts (about 1 pound) kosher salt and black pepper 1/4 cup extra virgin olive oil 8-12 large cloves of garlic, smashed (use to your taste) 6 carrots, chopped  {my go to is parsnip, I prefer the taste more}  1 tablespoon chopped fresh sage 1 tablespoon fresh thyme leaves kosher salt and …

Food: Dinner Tonight – Coconut, Sweet Potato Soup

Who says Keto diet is boring? All of the folks that I have introduced the option to over the past year. But that’s because they complicate the meal prep and then find it frustrating. Cooking is an art, and creating meal plans is a challenge that I welcome in my otherwise very hectic life. Believe it or not, cooking is therapeutic for me, and finding recipes such as this one to switch-up a bit to fit my dietary need is worth every effort once the soup hits the taste pallete. Right about now all I crave is soup. Most of the time buying ready-made cup from my favorite Soup Company. Although tasty, I want to cut down on the amount of salt restaurants usually add to their recipes. Funny, how in the 50’s and 60’s all the way to about early 2013-2014, it was all about canned goods, frozen packaged foods, and boxed goodies here in the U.S. (I can’t really speak for the rest of the world). Although disappointingly, I found the same sort of push in most of Europe, tapping heavy into working couples who have no time to make anything from scratch. Now we have nothing but information, about what to eat and what to avoid. Sometimes too much information confusing us into making bad choices, or even the choices once reported as good choices, we learn on Facebook and Twitter to being suddenly bad choices.
