Food: Dinner Tonight – Shrimp Cobb Salad

I am presently what  is referred to as – the salad bowl of Calfornia. Otherwise knows as California’s central coast. The place where all the beautiful farming takes place. I love being here because it is the best getaway for this city girl, tired of the steel, stone and glass all around, and too much construction throughout the city of San Francisco. Which I am not certain if it’s to beautify it or add to the chaos. I’ve lived in the city all my life, and watched it grow into something, I am not sure I appreciate as much as the simpleness the city once was. Sure I live in the outer sunset, which is a bit quitter than downtown, but still, the city is growing in a direction I am having trouble with truly appreciating the older I get.

With that said, I make a conscious effort to escape to the countryside, whether east of the city, or south, I take a drive or a flight to somewhere surrounded by farms, where downtown consists of dated small local shops and restaurants. There are even a few white picked fences around these parts of the state, and that perfect sense of slowness I so crave.

Nostalgia aside, this particular post is about a salad recipe I found here, which, again works well with my efforts to Keto-diet. It has all the Keto approved ingredients, minus a few I have * marked, which make it easy for me to indulge, along with the non-Keto members of my family. Check out the recipe:


  • 2 tablespoons extra virgin olive oil
  • 1 1/2 pounds shrimp, peeled and deveined
  • 2 teaspoons chipotle chili powder
  • 1 teaspoon ground cumin
  • Kosher salt
  • 6 cups fresh greens, such as romaine
  • 1 cup cherry tomatoes, halved
  • 1 peach or nectarine, thinly sliced  *(can be omitted for hardcore Keto followers)
  • 4 ounces feta cheese crumbled
  • 1 avocado, sliced
  • 6 strips crispy bacon, crumbled
  • 4 hard boiled eggs, sliced


  • 1/4 cup extra virgin olive oil
  • juice of 2 limes
  • 2 tablespoons apple cider vinegar *(can be omitted for hardcore Keto followers)
  • 1 tablespoon honey  *(Can be omitted for hardcore Keto followers)
  • 1 jalapeño, seeded if desired
  • 1/4 cup fresh cilantro
  • 1 pinch kosher salt
  • 1/2 cup fresh corn kernels *(can be omitted for hardcore Keto followers)  – {more}
