Healthy and Beauty: Yoga Right About Now

Parts of the weekend didnt’ turn out how I expected – with my stress level elevating to highs so out-of-control that my body simply shut down. This is of course stress upon stress of every-day life and  some not-so-normal  nonsense. I realized after taking a step back and deep breaths, that I needed to re-start my yoga classes – without coming up with a dozen or more excuses that I need to be elsewhere first taking care of anyone else but myself. So the first thing I did, was add a weekly reoccurring calendar reminder for Fridays at eleven in the morning for me to simply disconnect from my life,  and go do yoga, followed by deep meditation. Food: Dinner Tonight – Cauliflower, Cheese, and Tahini

Sometimes, I just don’t want to eat a full meal – so I tap into what my tastebuds are craving and go from there – in this case: spicy cauliflower cheese bites with tahini ranch INGREDIENTS 2 heads cauliflower, cut into florets 1/4 cup extra virgin olive oil 2 tablespoons hot sauce (I like Franks) 1 teaspoon smoked paprika 1/2 teaspoon cayenne pepper, more or less to your taste 1/2 teaspoon garlic powder kosher salt and pepper 1/2 cup grated parmesan 1/3 cup grated cheddar TAHINI RANCH 1/4 cup tahini 1/4 cup lemon juice 1/2 teaspoon dijon mustard 1 tablespoon chopped fresh chives 1 tablespoon chopped fresh dill 1/2 teaspoon garlic powder 1 pinch cayenne pepper kosher salt and pepper {more}

healthy recipe: sweet potato, kale and sage skillet quinoa

As always, I am on a healthy kick, eating everything I can that’s good for you. Seldom, eating junk-food. I’ve been like this all my life, even before the healthy eating campaign that’s been in place gradually for the last five years or so. Anyway, this bit of info is not important, what’s important is the recipe I found here and as always want to share it with everyone: Ingredients: 2 cups of cooked quinoa 1 extra large shallot, chopped {about 1/2 cup} 1 tablespoon fresh sage, chopped 2 sweet potatoes 4 cups Tuscan kale, ribs removed + shredded 2 tablespoons coconut oil 1/2 teaspoon paprika sea salt + coarse ground pepper, to taste 1. Preheat the oven to 400. Scrub and dry your sweet potatoes and pierce a few times each with a knife. Do NOT cover in foil. Place a cookie sheet {to catch the drips} on the bottom shelf in the oven and toss the potatoes onto the shelf above it. Roast as is for about 45 minutes, or until soft and tender. Cool …
