Food: Dinner Tonight – Beans and Toasted Italian Bread

In Rome, I’ve observed, that most tourists normally opt for pasta or pizza while seated at curbside at any restaurant, aiming for a quick bite in between touring the amazing ancient city. And this is often the case for my travel partner, but not me. I scan the menu for Canoli beans (Fagoli) hopeful it is offered by the restaurant.  And if so, I order the simple dish prepared with olive oil, garlic, and Parmesan cheese, served with a slice of toasted Italian bread and enjoy every bite. So guess what I am craving for dinner tonight –  beans not poured over the bread, but rather served with on the side. For fourth of July or anytime, this recipe is an amazing variation to a grilled steak dinner. Food: Dinner Tonight Chicken and Roasted Potatoes

Ah the simple pleasures of chicken and potato and although the chicken Coq au Riesling recipe I found here is a meal in itself, I felt the need to make a roasted potato side dish. What? I need comfort food with the lingering wintery weather. Food: Dinner Tonight – Salmon Burger

Variation is key to a successful dinner get-together – even for a busy family – who sometimes can’t sit down together for a proper meal. I say, create a menu and put it on display in the kitchen and see just how quickly everyone shifts their schedules around to be present for dinner. Here’s one I’m making tonight. I love Salmon burger and most of the time I order it in restaurants, thinking I can’t make it happen at home. Also known as pizza to me. Food: Dinner Tonight – Spinach, feta, rosemary, pine nuts mini-pies

I love how everyone has added a certain twist to  my Mediterranean background traditional dishes and in some cases it’s worked just fine, others it was a total disaster. This mini-pie recipe is something I’ve appreciated for a while now and will make a batch for dinner, with a side of plain yogurt for dipping. At least that’s how I roll. 🙂 RECIPE 2 tbsp olive oil 1 onion, finely chopped sea salt & freshly ground black pepper 1 tbsp finely chopped fresh rosemary 1 clove garlic, crushed 1 teaspoon cumin 1/2 tsp ground coriander 1/2 tsp cinnamon 1/4 cup currants 1/4 cup pine nuts 240g washed and dried baby spinach (a salad spinner is good for this) 1-2 tsps lemon juice 150g feta, crumbled 500g ready rolled shortcrust pastry sheets 1 egg, whisked 2 tbsp sesame seeds

Food: Dinner Tonight with Sweet Potato, Poached Egg, Avocado

I eat whatever I crave at any given time. Meaning to say, I don’t necessarily save an ideal breakfast meal just for breakfast. Eggs for dinner suits me just fine.  So, with that in mind, here’s a quick and a wonderful treat I plan to make for dinner tonight: INGREDIENTS 2 sweet potatoes olive oil salt + pepper for the chimichirri: 1 cup of loosely packed cilantro 1 cup of loosely packed parsley 1/3 cup of red onion 4 cloves of garlic 1/2 of a jalapeño, seeded 1/2 teaspoon of kosher salt 1/2 cup of extra virgin olive oil 3 tablespoons of red wine vinegar for the avocado mash: 1 avocado a squeeze of fresh lime juice (1/2 a lime) olive oil salt + pepper 2 fresh eggs (optional)

Food: Tonight’s Dinner – Thai Basil Noodles

Here’s a craving I’ve had for a few days, so…I am heading to Trader Joe’s after work for this recipe’s ingredients: Ingredients 1/3 cup Simple Truth Tahini sesame seed paste 2 tablespoons honey juice and zest of 1 lime 2 tablespoons fish sauce 1 clove garlic, minced or grated 1 tablespoon fresh ginger, grated 1 (8 ounce box) rice noodles 4 cups baby kale, finely chopped 1 (16 ounce bag) frozen shelled edamame, thawed 3 carrots, shredded or chopped 2 bell peppers (red, yellow and or orange), sliced thin 1 cup fresh or frozen mango, chopped into chunks 2 stalks lemongrass, finely chopped 4 green onions chopped 3/4 cup fresh basil, and cilantro sliced fresno peppers, sesame seeds and roasted cashews, for topping
