Food: A New Take On Mexican Food

I love finding that unique recipe online and quickly wanting to share what I am making for dinner tonight for not the Jeffrey (Barefoot Contessa reference) in my life. The title of this blog recipe is CRISPY CARNITA STUFFED SWEET POTATO SKINS WITH SALSA VERDE AND MANCHEGO. Dear blogger, you had me at Salsa Verde.  The only alteration I would make is shredded beef instead of pork since I am not a fan of pork:

Food: Something with Sweet Potato, Cheese, Cajun…Amazing

Last night I craved soup – considering how cold the city is THIS Indian Summer (eye roll). We had a sweet potato and ginger boxed soup from, you guessed it, Trader Joe’s. It was missing something I thought, so I added bacon bits, and a side slice of yogurt cheese, you guessed it, from Trader Joe’s :). A day later I discovered this recipe and as usual had to share with all of you probably the BEST sweet potato recipe ever – this site gets me for sure. I mean check this out for the drizzle… 1 tablespoon olive oil 1 large or 2 small cloves of garlic, minced or grated 1/2 cup milk + more if needed 1 1/2 cups shredded sharp cheddar cheese or smoked gouda cheese + 1 tablespoon flour 1 teaspoon seasoned salt + pepper

Food: Chicken and Cauliflower Rice

I bought a package of cauliflower Rice at Trader Joe’s over the weekend, determined  to make a spectacular dish out of it. Because the last time I bought the rice variation, it didn’t turn out so well when I sautéed it with a bit of olive oil. So naturally, I turned to my favorite foody site here, and found the best recipe imaginable for Apricot (my favorite) chicken and cauliflower rice dish…and folks, I am on it. In the meantime, I figured I better share it with all of you, just in case we are all on the same page about the apricots, chicken, and cauliflower rice, and wine of course 🙂 {photo and recipe credit click here}

Food: Guacamole in Abundance

I’ve been craving the strangest of foods lately. For example bbq ribs and salad. Mascarpone over fresh peaches, guacamole with slivers of fresh jalapeño, lots of watermelon and salty cheese, and finally tuna soaked in fresh squeezed lemon juice. Not all mixed together mind you. But that’s been my cravings, and no I am not pregnant. So, naturally my eyes lit up when I stumbled upon this amazing recipe I consider a meal more than a snack or appetizer:  

How To Recycle Jam Jars

I buy these jams in abundance, and spread them on freshly baked French bread every Sunday morning, and sit by the window and enjoy breakfast the only day of the week, at a much more slower pace. So, you can imagine my collection of the perfect shaped jars, I know someday I would use for a healthy dessert I’ve been searching for. but haven’t found…until NOW! Chai Seed Pudding – what!!!  

Food: Huevos Rancheros – My Favorite Anytime Dish

Over Valentine’s weekend, the hubs and I drove across the Golden Gate Bridge heading to nowhere specific. First stop was in Sausalito for the best Huevos Rancheros I could ask for. Since then, I’ve craved the dish almost every morning. But the last couple of weeks have been too insanely busy  for me to make a proper breakfast or lunch or dinner for that matter. So, guess what we are having for dinner tonight?  

Food: Cannot Get Enough of These Healthy Suggestions

I am glad I stumbled upon this wonderful blog, since I am the worst at photographing food I make to post. Meaning I do forget to do it each time I come up with my own creation. Anyway, I found five favorites to add to my menu, changing it up a little from our healthy normal and very basic eats I have insisted upon with my family. Here are my favorites:

Recipe: Zucchini Oat Cake For Breakfast

This the season I crave more substance, not feeling salads or just boiled eggs, a slice of chicken. I need comfort food mostly saturday mornings,  a piece of toast perfectly spread with Mascarpone and Cherry Jam, a slice of lemon cake from Starbucks paired with a warm cup of tea, while I type away my next novel. In light of my craving, I stumbled upon this cake, surely including many healthy ingredients, so I don’t feel so guilty devouring a slice and yes with my favorite English breakfast tea infused with a cinnamon stick.
