Food: Chai Infused Carrot Cake

I love carrot cake, and it is probably the only one I won’t pass up on if I were anywhere in the world offering the option. So a carrot cake recipe is always in order, and this chai infused one is one I am trying on Saturday: For the cake: 1/4 cup of almond milk 1 tbsp of Assam tea 1 cup of sugar 3/4 cup of ghee, melted 3 eggs, room temperature 1 tsp of vanilla extract 2 cups of flour (310g) 3 tsp of baking powder 1 tsp of salt 7 – 8 turns of fresh ground black pepper 1 1/2 tsp of cardamom 1 1/2 tsp of ginger 1 tsp ground cinnamon 2 cups of fresh shredded carrots, about 2 large carrots For the frosting: 1/2 cup butter, room temperature 8oz of cream cheese, room temperature 1 cup of sifted powdered sugar 1/2 tsp of vanilla 1/2 tsp cardamom 1/2 tsp ginger 1/2 tsp cinnamon pinch of salt  {more} Do you have a favorite cake? Food: Dinner Tonight – Chicken In French Wine and Mustard

Told the hubs I wanted to go to dinner tonight. But what I was meaning to say is that I wanted to indulge in a meal that is different from the normal cooking I do in my household. So while he thinks we are going out, I am going to surprise with this wonderful variation to the otherwise mundane chicken. INGREDIENTS 1 cup dry white wine, such as Pinot Grigio or Sauvignon Blanc 1/3 cup heavy cream or canned full fat coconut milk 2 tablespoons dijon mustard 2 tablespoons grainy dijon mustard 2 shallots chopped 2 cloves garlic, minced or grated kosher salt and pepper 2 pounds boneless chicken breasts, skin on or off 1 tablespoon extra virgin olive oil 2 tablespoons fresh thyme leaves 1 tablespoon fresh chopped sage 2 tablespoons salted butter 1/3 cup freshly grated parmesan cheese 1/2 bunch kale, chopped mashed potatoes or steamed rice, for serving {more} Followed by this Avocado-Chocolate pudding dessert and if avocado isn’t your thing, here’s a list of other healthy dessert options.   

How To Recycle Jam Jars

I buy these jams in abundance, and spread them on freshly baked French bread every Sunday morning, and sit by the window and enjoy breakfast the only day of the week, at a much more slower pace. So, you can imagine my collection of the perfect shaped jars, I know someday I would use for a healthy dessert I’ve been searching for. but haven’t found…until NOW! Chai Seed Pudding – what!!!

Usually around the beginning of April I get the itch to travel, especially to Paris. So everything I research online is geared towards Paris this and Paris that. What can I say. As a result of my weakness, it’s no wonder I came across this recipe from my favorite chef and author, David Lebovitz:  Enjoy and let me know how it turned out? Sabayon Four to six servings Adapted from Ready for Dessert Any kind of white wine that you like will work well for sabayon; dry, sweet, or sparkling. I do tend to prefer sweeter dessert wines because their flavor is a little more concentrated. Wines like late-harvest Riesling, Sauternes, Muscat, or a wine that is richly flavored is good. You can use Marsala if you want to make traditional zabaglione. If you’re avoiding alcohol, you can use a non-alcoholic sparkling cider instead, perhaps adding a few drops of lemon juice, to balance any sweetness.
