recipe: fun grilled cheese sandwich

My weakness indeed. I can eat cheese every day, twice even, but I know my limitations and opt to eat healthy mostly and cheesy foods maybe once a week. I loved this grilled cheese sandwich and since I make a variation of it at home, I wanted to share it with all of you. My variation is freshly sliced tomatoes and just ripe avocado, and if the tomatoes are old, I stew them and spread that across the sandwich. Delicious doesn’t even express how good this sandwich is – in moderation of course. 😉 – choice of bread is left up to you. I use toasted Italian or French sliced bread. Let’s face it. We are on information overload about how to be healthy, eat well, sleep enough, drink plenty of water and the ‘do’s and don’t’ to consider to maintain a fine lifestyle. On occasion, I scroll through these articles only to validate what I already know and decide after 30minutes of scanning the information, to keep going, just the way I have for years – eating the good and the bad in moderation, exercising and staying positive, knowing, deep down, those are the key ingredients for a lasting effect.   I was on the fence with US-Belgium  game. I figured it was wonderful the U.S. made it thus far, but I knew deep down, it wasn’t our time yet to go all the way. I say give it a decade or maybe soccer or football isn’t really our thing and we should stick to American football. I am constantly looking for ways to eat healthy, combining the right type of foods together to create wholesome meals to follow a good eating plan. So, when I was traveling through Italy last year, I walked into the breakfast room at my hotel in Genoa and noticed a woman piling up in a bowl loads of sliced Kiwi. She went to her table and nearly gulped them with a glass of water and then went back for seconds, doing the same afterwards. healthy recipe: kale salad in all sorts

Although it’s more cold in San Francisco during the summer months than it probably is in Alaska during the winter (yes I am exaggerating a little but you get the point) I still crave salads and fruits more than comfort food.  So, I run to Trader Joe’s or Whole Foods Market (two of my favorite grocery stores) and stock up on quinoa and Kale and pounds of fresh fruits, insisting for my hubby to indulge just the same. Kale is a hit or a miss if not prepared right. So, I had to make sure I found just the recipe or ingredients to add.  I found  a recipes here , (ten variations to be exact) and have managed to test out  three of them so far, my favorite being all of them 🙂 So please thumb through the list of recipes by clicking on the photo below and let me know what you think?

healthy recipe: sweet potato lovers

I love sweet potato and always incorporated it with my meals. So, naturally I look for variations in recipe for this starchy treat. I found one here and of course I had to share it. Big Comfy Sweet Potatoes Serves 4 Ingredients: 4 medium-large sweet potatoes (organic, if possible) 1 ½ cups black beans (equivalent to 1 can) 1 ripe avocado Optional toppings: cilantro green onion sprouts lime wedges crumbled goat’s cheese crushed chili flakes Directions: 1. Preheat oven to 400°F/200°C. Prick sweet potatoes a few times with a fork. Place on a baking sheet in the oven and roast for 30-45 minutes, depending on the size of the potato. You will know it’s done when a knife can easily pierce the skin and the center is soft. 2. Remove sweet potatoes from oven and slice each one down the center, almost through to the bottom. Open up to reveal its orange flesh. 3. Stuff the sweet potato with black beans and top it with avocado, and any other herbs, sprouts or veggies you like. …

healthy eating: kale salad with lovely vignaigrette dressing

Kale is one of those things you either love or hate. I happen to love it, up to now mostly steaming it to make it easier on the digestive system. The other reason is because I haven’t yet found the best dressing to pair it with. So, as you can imagine, I paused here while searching online for ideas to incorporate into my weekly menu. Kale, Orange nad Hazelnut – a variation I already love. But what caught my attention the most was the dressing. Ingredients 8 cups Tuscan kale, large stems removed, chopped into bite-sized pieces 2 blood oranges or cara cara oranges 1/2 cup stilton, or other blue cheese, crumbled 1/2 cup blanched hazelnuts, toasted and chopped   for the vinaigrette: 1 tablespoon minced shallot 1/2 teaspoon minced garlic 1/2 tablespoon dijon mustard 1/2 tablespoon honey 1 tablespoons balsamic vinegar 1/2 cup extra-virgin olive oil 1/2 tablespoon minced parsley zest and juice from 1 lemon pinch of kosher salt and freshly-ground black pepper Make the vinaigrette. In a small bowl, combine shallot, garlic, dijon, honey and vinegar. …

healthy smoothie: for those warm days

  We’ve been experiencing amazing weather in San Francisco, upwards of 80-90degree temperatures. The locals take advantage of such weather by mostly going to the beach, wearing summer clothes and showing off their unique footwear/sandals. These are all things we seldom do here in the city, since it’s always cold and often times more foggy than we care to think about. With this weather, I have to say I’ve lost my appetite for food, craving mostly salads, popsicle and frozen drinks. So, in honor of HOT in temperature that is, I have included a smoothie which I found here, but have added a few of my own alternatives, since I am allergic to soy.   Mango Smoothie 1 banana juice from 2 blood oranges  ***well I use regular oranges 1/2 mango 1 cup soy milk  ***I use almond milk instead Place everything in a blender and blend until puree. {photo and recipe credit click here}

eating healhty for breakfast or not

  Every morning with the except of Sundays I eat healthy. Oatmeal and a cup of black coffee. On Sundays however, I take great pleasure in making breakfast. Whether it’s pancakes, eggs and bacon or an egg sandwich or a frittata. I use healthy ingredients of course but also don’t mind if there are a few fatty ingredients either. This past Sunday I made pancakes with the recipe I found here the week before. I was excited and although I often do make pancakes with buckwheat instead of regular flour, I appreciated the recipe; adding of course a few of my favorite ingredients  instead. eating right or juicing after a vacation

I have to admit, although I watched what I ate mostly, sticking to salads and soups everywhere I went on this trip, I did eat desserts and bread every single day, also downing a few cans of soda for energy and wine and mixed drinks while winding down at the end of the day. So, as you know, like most people returning from a vacation, I plan to watch what I eat and go back to my exercise regiment right away, adding a juicing option not so regimented. Here’s a good recipe to consider: Kale Juice Serving: 2 Servings Ingredients 6 leaves kale (1 bunch) 2 stalks celery 2 green apples 2 pears 1 lime Instructions First wash your fruits and veggies. Leave the kale leaves and celery as is, these can go in your juicer whole. Chop your green apples and pears in half (leaving the skins on) just making sure to remove the seeds.
