healthy recipe: pho – vietnamese noodle soup

I had the best pho in Madrid (so far), I should say… We asked our hotel concierge for somewhere to eat, Italian we said, when he asked our preference. I was craving pasta. What can I say.  Anyway, the man behind the podium in the lobby stepped out of the hotel to curbside and pointed in the direction we needed to go to find the only Italian restaurant in the area. We walked a few blocks, through the narrow streets and stumbled upon such a restaurant. Except that it was closed.  From sheer frustration,  we kept walking further, trying to figure out where to eat. Our clocks were off naturally and all of the restaurants didn’t open until much later. recipe: grilled avocado and caprese

Why is it on Monday’s I ‘m thinking about food? Anyway, over the weekend I found this recipe online and surprised my hubby with it. It’s funny I hardly followed the step by step. I simply looked at the photograph and knew exactly how to recreate. I also poached eggs and dropped it on top. healthy eating: kale quinoa bites

Over the weekend I maintain my healthy eating as much as possible, minus of course the occasional bottle of wine I share with friends and family. But come Mondays, I want to share with you only healthy recipes to set the tone for the week. I’ve worked hard  losing weight and toning my body, and I will not let it go to waste :). healthy eating: Spaghetti with Kale

I have a weakness for spaghetti, and have pretty much mastered a recipe making the typical version by using organic tomato sauce, olive oil, garlic, and chicken sausage, and fresh basil leaves. The pasta can be any style. I use spaghetti pasta. Anyway, The other day, I came across this recipe online and want to try it. healthy eating a must after last week – winter salad

While on my road trip to Nebraska, I did nothing but eat unhealthy. It was a road trip and we had no time to stop off at fancy restaurants. So we did Jack in the Box mostly and a few other quick bites from gas station stops. My the 7th day I wanted to just throw up. So now that I am back, I am going to start my week with salads, slowly working my way back to healthy eating. Here’s a recipe that stuck out, especially since I couldn’t find fresh apples anywhere on the road. Ingredients •1-2 cup(s) pomegranate seeds (about 1 pomegranate) •1 pear, cored and chopped •1 large apple, cored and chopped •1/2 cup pumpkin seeds For the vinaigrette •2 teaspoons maple syrup (I USE AGAVE SYRUP INSTEAD – not a fan of traditional maple syrup) •1 teaspoon lemon juice •1 teaspoon olive oil •1 teaspoon apple cider vinegar •1/2 teaspoon cinnamon Toss all together and enjoy {recipe and photo source, click here}

healthy eating continues well into 2015

I totally loved pushing for healthy eating in 2014, and although in the first few weeks it was difficult to cut out the carbs/sugars/fatty fats, I got used to it eventually and now when I eat out of the healthy norm my body has become adapted to, I feel sick. Which in my opinion is a good thing, like a bad hangover reminding me of the consequences of drinking too much. Anyway, here’s a twist to chicken soup. Pho to be exact, and we do a lot of it here in San Francisco. It almost seems like there is a Pho eatery opening up everywhere I turn and that’s fine.
