There are days I don’t want to eat dinner. I simply want to snack on cheese, crackers, olives and a glass of wine. Of course with a classic film playing on the tube. healthy eating: Spaghetti with Kale

I have a weakness for spaghetti, and have pretty much mastered a recipe making the typical version by using organic tomato sauce, olive oil, garlic, and chicken sausage, and fresh basil leaves. The pasta can be any style. I use spaghetti pasta. Anyway, The other day, I came across this recipe online and want to try it. healthy eating a must after last week – winter salad

While on my road trip to Nebraska, I did nothing but eat unhealthy. It was a road trip and we had no time to stop off at fancy restaurants. So we did Jack in the Box mostly and a few other quick bites from gas station stops. My the 7th day I wanted to just throw up. So now that I am back, I am going to start my week with salads, slowly working my way back to healthy eating. Here’s a recipe that stuck out, especially since I couldn’t find fresh apples anywhere on the road. Ingredients •1-2 cup(s) pomegranate seeds (about 1 pomegranate) •1 pear, cored and chopped •1 large apple, cored and chopped •1/2 cup pumpkin seeds For the vinaigrette •2 teaspoons maple syrup (I USE AGAVE SYRUP INSTEAD – not a fan of traditional maple syrup) •1 teaspoon lemon juice •1 teaspoon olive oil •1 teaspoon apple cider vinegar •1/2 teaspoon cinnamon Toss all together and enjoy {recipe and photo source, click here}

healthy eating continues well into 2015

I totally loved pushing for healthy eating in 2014, and although in the first few weeks it was difficult to cut out the carbs/sugars/fatty fats, I got used to it eventually and now when I eat out of the healthy norm my body has become adapted to, I feel sick. Which in my opinion is a good thing, like a bad hangover reminding me of the consequences of drinking too much. Anyway, here’s a twist to chicken soup. Pho to be exact, and we do a lot of it here in San Francisco. It almost seems like there is a Pho eatery opening up everywhere I turn and that’s fine. Since I can’t get enough of the chicken Pho, I decided to find a recipe online I could supplicate, and here it is: 1 ½ lbs (approximately) bone-in skin-on chicken breast 2 teaspoons vegetable oil 1/2 onion, diced 1 3×1″ piece peeled ginger 1 jalapeño, seeds removed and diced 6 cups chicken stock 2 whole, star anise 3 whole cloves 3 Tbs. fish sauce 1 Tbs. …

I can’t believe we are a week away from Thanksgiving here in the states, and the planning begins for most people looking forward to entertaining. Here are a few recipes I stumbled upon which I consider a fresh take on the old tradition, especially for those who hate turkey as much as I do. Being a San Franciscan, I must say we have the best Asian Kitchens, traditional or Asian infusion, and I swear every time I turn around, another one is popping up in the city, exciting me to try each and every one of them. Anyway, one of my favorite bloggers here, had a recipe posted on her site I couldn’t pass up since it tapped into my Asian food cravings. Which happens on a daily basis, right around the lunch hour. This recipe I decided to try last night, except instead of using pork – which I don’t eat, I opted for Sweet Italian style chicken sausage from Trader Joe’s, adding my own touch to the very perfect recipe.   Serves 6-8 as a side dish Ingredients Meatballs 1 pound ground pork 1 bunch green onions, diced 1 cup of cilantro, chopped 1.5 tablespoons of sugar 1 teaspoon salt …

recipe: mexican lasagna borrowed

I love Mexican food. I never say no to it when out with friends who suggest the option. So, I found a recipe here, which by changing it up a little to add my own healthy take, I found it tasty and refreshing from the norm. Ingredients 1 lb. lean ground meat (I used turkey)  – I used ground chicken since I hate Turkey and I don’t eat beef 1/2 cup chopped onion 1/2 cup chopped green pepper 2 1/2 cups salsa –  I used fresh diced tomatoes 1 cup corn (can use frozen or canned, drain as needed) 1 teaspoon chili powder 1 teaspoon ground cumin 8-12 corn tortillas, divided and cut to fit lasagna 1 (16 oz.) container cottage cheese (I used an organic low-fat version) – 1/2-1 cup shredded cheddar cheese, for sprinkling over the top of the lasagna Instructions Preheat oven to 375 degrees F.
