Food: Cauliflower Tacos…Need I Brag More

Cauliflower, something I’ve eaten in variation all my life,  has become a trend in recent years for those seeking health conscious diets.  And yes, I use cauliflower as a replacement for rice as a side dish, sandwich fill instead of the salami I used to devour at least once a week, and as a snack with yogurt dip. And now….as filing for tacos… summer or not, this is added to my menu. Check out the recipe here. And you know what is the best part. It’s so easy to make.

French For A Day – Or A Day To Play French

There is a restaurant (La Central)  in the corner of Grant and Bush in San Francisco, I haven’t been to for a while. Perhaps three years-unfortunately for me-because I had forgotten how wonderful the place is, not only because of the very French ambiance but for the food also. I normally take the same route to walk during my lunch break when I plan to shop near Union Square. But Tuesday last week, I decided to veer right, thinking I was going to go to Banana Republic to check out their clearance rack, instead I went in for lunch – dragging a good friend of mine with me.

French Onion Mac and Cheese and Football

A dreary Sunday I decided to spend at home, instead of walking through a mall for last-minute Christmas shopping. I felt the need to wind down, especially from the crazy busy week prior – coordinating festivities week at work, and planning the company holiday party in addition to my normal chores. With the mood I am in, I needed comfort food, a hearty steak and this amazing recipe I found, and had to share – French onion mac and cheese. Something which will become a norm at my house going forward.  

High Protein Recipes I can’t get enough Of

My regime is something like this. Get up at five every day, drink 16oz of bottled water. Work out at home or gym, and then proceed with my day. Breakfast consists of oatmeal or 2 boiled eggs and a cup of espresso.  Then snack at nine, yogurt or a fruit or a handful of almonds. Lunch is about the proteins, and dinner sometimes a protein drink or a freshly pureed juice with fruits  and veggies.  A sliver of dark chocolate if I crave it, and more water throughout the day. I don’t deviate much from the plan  no matter how tempting. Only if I am at a special event or on vacation do I make exceptions.  So I am glad to have found this amazing blog, where I go to for all of my recipes, outside, of course, from all of my mediterranean cooking.  

healthy recipe: kale salad in all sorts

Although it’s more cold in San Francisco during the summer months than it probably is in Alaska during the winter (yes I am exaggerating a little but you get the point) I still crave salads and fruits more than comfort food.  So, I run to Trader Joe’s or Whole Foods Market (two of my favorite grocery stores) and stock up on quinoa and Kale and pounds of fresh fruits, insisting for my hubby to indulge just the same. Kale is a hit or a miss if not prepared right. So, I had to make sure I found just the recipe or ingredients to add.  I found  a recipes here , (ten variations to be exact) and have managed to test out  three of them so far, my favorite being all of them 🙂 So please thumb through the list of recipes by clicking on the photo below and let me know what you think?

five friday finds just because

My mind wanders in different directions, every second of every day. One minute I’m wondering what we’ll have for dinner and the next, I’m writing out in my head an entire plot for my next novel. This is of course in between, juggling finances and functioning just in general. My weakness for sure, red velvet cupcakes. I can eat them by the dozen and make them everyday meal replacement if I had it my way. But, since I have to watch my weight and eat right, blah blah blah, 🙂  I decided it was time to search for a ‘skinny’ version of this wonderful dessert. I found the recipe here: Skinny Red Velvet Cupcakes Gina’s Weight Watcher Recipes Servings: 26 • Serving Size: 1 cupcake • Calories: 141 • Points: 3 pts • Points+: 4 pts 1 1/2 cups cake flour 1 cup white whole wheat flour 1 cup sugar 1 tbsp unsweetened dutch-process cocoa 1 tsp salt 1 tsp baking powder 1 tsp baking soda 1 tsp white vinegar 1/2 cup unsweetened apple sauce 1/4 cup butter, softened 1 egg 2 egg whites 2 tsp vanilla 1 1/3 cup light buttermilk 1 tbsp red food coloring Preheat oven to 350. Line cupcake tins with liners. healthy recipe: glazed beat and carrot salad

Normally, on the weekends, I seldom crave wholesome foods. By that I mean, pastas, meats, potatoes, rice, even peanut butter and in all reality a good cup of coffee will do just fine, except when I come across an amazing salad from my favorite site here. Then I just can’t stop craving. GLAZED BEET + CARROT SALAD // Serves 4 1/2 Tbsp. butter 2 Tbsp. extra virgin olive oil 2 large yellow beets, roasted and peeled, cut into 1/2” wedges 3 carrots, halved, large halves quartered if needed sea salt + pepper 2 tsp. honey 3 Tbsp. white wine vinegar 2 Tbsp. tahini 1 Tbsp. orange or lemon juice 1/4 cup finely chopped flat leaf parsley, divided 1/2 tsp. ground cumin 12 cups mixed baby lettuces 1/3 cup cooked garbanzo beans, rinsed and drained 2 Tbsp. toasted sesame seeds, white or black or mixed In a skillet over medium heat, melt the butter in the olive oil.
