Decor: A French Riviera Home

Dreaming of owning a home high on a hilltop, say somewhere along the French Riviera? I do. Actually, anytime a film is made along the French coastline, I stop and watch, no matter how cheesy the story, like this and this film. So, naturally, I did a stop and watch with this amazing home tucked somewhere high above Cannes and had to share my admiration of the craftsmanship. Food: Eggplant Pasta

Here’s how my Wednesday mornings go – at 5:30 a.m. I start with a larger chain grocery store to purchase all the essentials – which include meat. But for some reason the abundant amount of chicken is no longer the case, nor the free-range and organic versions. Quality beef is scarce and seafood is now more prepackaged.  Which might be an indication that I need to slowly get my family used to eating more plant-based, and less meat or just keep on freaking out until the refrigerator sections are filled again. So an hour ago, I announced to my mother that we are not having meet this coming week and all recipes will be mostly veggie based. She batted her eyes at me, and said – whatever you think is best. Dessert: Coconut Pie

I woke up today craving all sorts of desserts – so you know where my mind was about dinner tonight – or maybe after dinner tonight: INGREDIENTS CRUST 1/2 cup shredded sweetened coconut 3/4 cup all purpose flour 1 tablespoon Domino® Golden Sugar 6 tablespoons cold salted butter, cubed COCONUT FILLING 4 large egg yolks 1/4 cup cornstarch 2 (14 ounce) cans full fat coconut milk 1/2 cup, plus 1 tablespoon Domino® Golden Sugar 1/4 teaspoon kosher salt 2 tablespoons salted butter 1 tablespoon vanilla extract 1 cup shredded sweetened coconut 1 cup cold heavy cream zest of 1 lemon toasted coconut, for serving  {more here} Featured image and recipe source and full credit 

Monday June Day

I don’t like to look back, for there is when I fail in moving forward – is what I am thinking this first day of June and hoping we are nearing the end of this long journey to keep our world safe and pray that mankind will find their way to a peaceful resolution to whatever their cause. After experiencing a severe anxiety attack this weekend, I decided this month I want to dedicate to my self care, focusing even more on the beautiful things around the world.
