Food: For Anytime Meal – Eggs, Sweet Potato Hash

I am so glad to be back home. It’s almost the end to October and there is much to do in my household, I realized while scanning over the calendar, which shows I am booked through the end of January. Since when did life become so complicated and busier than ever?

My week long trip didn’t pan out as great as I imagined but these things happen and we simply learn from it and move on. The most thing I am excited about is being able to cook in my own kitchen and I have to say this recipe for breakfast, or perhaps for dinner in some parts of the world is a wonderful meal for the fam/family/familia or just roommates 🙂

Ingredients

SWEET POTATO & BRUSSELS

  • 1 medium-large sweet potato, chopped into bite-size pieces (skin on)
  • 3 cups Brussels sprouts (quartered if large, halved if small)
  • 1 Tbsp avocado oil (or other neutral oil // or sub water if avoiding oil)
  • 1 healthy pinch each sea salt and black pepper

THE REST

  • 2 tsp avocado oil (or other neutral oil // or sub water if avoiding oil)
  • 1/2 medium yellow, white, or red onion, finely chopped
  • 3 cloves garlic, minced
  • 3/4 cup finely diced Fuji or Jonagold apple (peeling optional // seeds + stem removed)
  • 1 Tbsp fresh minced sage (or sub dried)
  • 2 Tbsp dried currants (optional)
  • 1 cup spicy chicken or pork sausage (optional // buy local and organic meat whenever possible // or sub Vegan Sausage)
  • 2 heaping cups fresh spinach
  • 4 large eggs (farm fresh or organic, free range / pasture raised whenever possible // see notes for vegan options*)   {more}

On another note – have you seen the film Sliding Doors? I have – when it first came out and for the life of me cannot remember the story (that good or that bad?) so I decided after reading an article – which I will talk about over the weekend – to see it so that I can make proper reference to the idea that has conceptualized on flight back home.
